Hong Shui, or “Red Water” Oolong, is a traditional Taiwanese oolong style associated with the deeper oxidation and roasting once common in Dong Ding production. This example is produced in Meishan, Chiayi County from the Jin Xuan (TRES #12) cultivar.
The tea is ball-rolled, approximately 40–50% oxidized, and heavily roasted. Compared with many modern Taiwanese oolongs that emphasize lighter oxidation and greener, more floral character, this style relies on more substantial oxidation and roasting to build depth, body, and aromatic complexity.
Rather than focusing only on individual flavor notes, pay attention to the relationship between oxidation, roast, aroma, body, sweetness, and finish. This makes the tea particularly useful alongside a lighter high-mountain oolong, where the influence of processing becomes much easier to recognize.
