Boiled. Whipped. Steeped. — Experiencing Three Eras of Tea
This month, the NYTS Tea Book Club explores Kakuzō Okakura's classic The Book of Tea, first published in 1906.
But we won't only be discussing the book—we're going to drink our way through one of its central ideas.
Okakura describes the history of tea through three great “schools” of preparation:
Boiled Tea, Whipped Tea, and Steeped Tea.
